We can eat kale raw, steamed, sautéed or baked. It is a super food with super power!

It has the full protein package with calcium and iron that our bodies can digest it easily. It can be eaten as a breakfast cereal but that’s another post.

Kale and quinoa are the perfect combination for nutritional value and power living. Below is a recipe for a fresh and delicious kale and quinoa salad that will help support super moms’ busy and active lives.

Ingredients
1/2  bunch kale – raw

Cherry tomatoes – cut in half (amount is up to you)

1 white cheese –mozzarella, feta or goat (cut into cubes or crumbled)

1 cup cooked quinoa

1/2 cucumber diced

1/2 purple onion chopped

½ c Chick peas

1 lemon squeezed as dressing

*add chicken if you like!
