I love summer time for all the amazingly juicy, fresh and flavourful veggies!

Eating clean doesn’t mean you have to always search out complicated recipes with obscure ingredients. Why not keep it simple and really take in the fresh goodness and amazing flavours the most simple meals can bring to the table.

If you can go organic for the vegetables great and be sure to choose a quality grain- I prefer whole grain wild brown rice or organic brown rice.

Directions

To begin, prepare brown rice and place in a mixing bowl. Next add in tomatoes, basil, onion, garlic, Optomega Liquid Omegas, Balsamic Vinegar, lemon, salt and pepper. Mix all ingredients throughly, serve and enjoy! (Serves 2)

Ingredients
1 Cup Brown Rice, cooked (or quinoa or couscous)
5 Roma Tomatoes, chopped
1 Small Bunch of Basil, sliced
1/2 Red Onion, diced
2 Garlic Cloves, pressed
1 T. Optomega
1 T. Balsamic Vinegar
1 Lemon, squeezed
Salt and Pepper to taste

*You can eat this as a meal or add a side of BBQ’d chicken or dill and lemon salmon to kick in some protein!
*And since I love a little wine….a crisp Sauv Blanc would be a great companion.

There is no excuse of “having no time” for this wicked recipe!
