Fall is a time for comfort food for me.  I love warm and cozy meals that fill me up and make me feel warm and fuzzy inside without packing on any LB’s!

One of my fave and easiest things to make is crockpot Mexican Chicken!  Its a little creation that has evolved in my home over the years and I wanted to share.

Ingredients:

  • chicken breasts (I usually make 6 at a time so we can have leftovers)
  • 2 jars of salsa (low sodium is best!)
  • 1 can of rinsed and drained black beans
  • 1 can of jalapenos
  • 1 package Mrs. Dash Taco Spice

Throw everything into the crock pit and set on high for 5-6 hours.  I like to thicken the sauce at the end with some cornstarch. Service on top of quinoa or brown rice, alongside a salad OR shred the chicken and stuff into a roasted pepper, top with fat free sour cream and enjoy!
