I am on a recipe rampage and craving all sorts of things since competing in my fitness competition.  I have not pigged out though but I feel like getting creative for my little guys school lunches and giving my family a little more variety in the food department.  Hubby  is always a trooper and eats all the greens and proteins I scoop onto his plate for dinner.  So with a little more time on my hands, and some great recipes set aside, I am going on a CleanFitMom clean cooking spree!

But first, my kinda-clean cookie recipe I must share!

Healthy & Delicious Chocolate Chip Oatmeal Cookies

  • 1/4 cup olive oil or coconut oil
  • 1/2 cup brown sugar
  • 1 eggFoodgwkr
  • 1/4 teaspoon baking soda
  • 1 teaspoon vanilla
  • 1/2 cup oats
  • 3/4 cup whole wheat flour
  • 1/2 cup chopped walnuts (or sans nuts to make these school friendly)
  • 1/2 cup dark or semisweet chocolate chips

In an electric mixer, beat together the oil, brown sugar, and egg until fluffy.  Add the remaining ingredients and beat until well mixed.  Use a medium (approximately 2 tablespoons in size) cookie scoop to place cookies on a cookie sheet.  Bake in an oven preheated to 375 degrees for 8-10 minutes, or until golden brown around the edges.

Makes 24 cookies.
